Garam Masala Recipe

Roast, Then, Grind Together:

  • 3 Hefty Cinnamon Sticks
  • ¼ Cup Black Cardamom Seeds (ground amount)
  • 3 tablespoons Green Cardamom Seeds (ground amount)
  • ¼ Cup Whole  Cloves
  • ½ Cup Cumin Seeds
  • ½ Cup Coriander Seeds
  • 1/2 Cup fennel seeds
  • 1/4 Cup black pepper corns
  • 1 teaspoon saffron threads

Mix in:

  • 2 tablespoons ground ginger
  • 2 teaspoons ground mace
  • 2 teaspoons ground nutmeg

*consider halving the recipe; makes too much (cup and a half or more).

We store it in a jar, inside an airtight container liberally lined with salt, in the fridge. It keeps for months.
