Garam Masala Recipe
Roast, Then, Grind Together:
- 3 Hefty Cinnamon Sticks
- ¼ Cup Black Cardamom Seeds (ground amount)
- 3 tablespoons Green Cardamom Seeds (ground amount)
- ¼ Cup Whole Cloves
- ½ Cup Cumin Seeds
- ½ Cup Coriander Seeds
- 1/2 Cup fennel seeds
- 1/4 Cup black pepper corns
- 1 teaspoon saffron threads
Mix in:
- 2 tablespoons ground ginger
- 2 teaspoons ground mace
- 2 teaspoons ground nutmeg
*consider halving the recipe; makes too much (cup and a half or more).
We store it in a jar, inside an airtight container liberally lined with salt, in the fridge. It keeps for months.
