Simple Saturday Barbecue Tri Tip

Simple, really good, and easy to buy at a decent grocery store.

  • Marinated Beef Tri Tip, this one was called Santa Maria, but it matters not. Over hot coals, lid barley covering, for six minutes; without flipping the meat, move to the cold side of grill for ten minutes; lower cover to almost closed; flip and repeat. Our piece was two pounds, and the result was perfect.
  • Grill baked potato: in foil, a scrubbed russet, with butter, salt, pepper, and a touch of olive oil, on grill, off heat, for any time between forty-five minutes and an hour and fifteen.
  • broccoli: in a cast iron pan on the grill, with olive oil, butter, salt, pepper, and a touch of sugar; over heat for about twenty, shaking regularly.
  • Foil wrapped corn on the cob: husk removed; in foil with: butter, olive oil, salt, pepper, and a shot of Tabasco, on the cold side for about thirty minutes.
