Quick Thursday Dinner

We made our standard Tilapia Fillets, with Brussel Sprouts and mashed potatoes, but also a quick tomato topping: we used our home-grown cherry tomatoes (black cherry), sautéed in a skillet in olive oil and a touch of butter, with salt, pepper, and herb-du-provence- simple and fantastic. The tomatoes go beautifully with the simple fish fillets.
